Gastronorm Pans - Sizes explained so you can order the correct pan

The Gastronorm Pan is one of the most utilised pieces of equipment in the commercial kitchen. However, it can be a tad confusing when it comes to sizing and volumes. So we’ve decided to make things easy and summarise everything for you.

Gastronorm sizing is a unique system used to indicate the maximum capacity of a container or pan. It is based on the outer dimensions of the container or pan.

The basic Gastronorm measure called GN-1/1 is 530mm Long x 325 mm Wide. All Gastronorm container sizes are measured in relation to this basic measure.

The following sizes are for Maxipan Gastronorm Stainless Steel pans.

1/1 Size Steam Pan – 530mm Long x 325mm Wide – Heights/Litres: 20mm/2.75L, 40mm/5.5L, 65mm/8.8L, 100mm/13.7L, 150mm/20L, 200mm/27.8L

2/1 Size Steam Pan – 650mm Long x 530mm Wide – Heights/Litres: 20mm/5L, 65mm/18L, 150mm/42.8L

2/3 Size Steam Pan – 354mm Long x 325mm Wide – Height/Litres: 100mm/9L

1/2 Size Steam Pan – 325mm Long x 265mm Wide – Heights/Litres: 20mm/1.2L, 65mm/4L, 100mm/6L, 150mm/9.2L

1/3 Size Steam Pan – 325mm Long x 176mm Wide – Heights/Litres: 65mm/2.4L, 100mm/3.5L, 150mm/5.4L, 200mm/7.2L

1/4 Size Steam Pan – 265mm Long x 162mm Wide – Height/Litres: 200mm/4.8L

2/4 Size Steam Pan – 530mm Long x 162mm Wide – Height/Litres: 100mm/6.9L

1/6 Size Steam Pan – 176mm Long x 162mm Wide – Heights/Litres: 65mm/1L, 100mm/1.5L, 150mm/2.3L, 200mm/4.3L

1/9 Size Steam Pan – 176mm Long x 108mm Wide – Heights/Litres: 65mm/0.6L, 100mm/1L

Perforated Pans and Steam Pan Lids are also available.

Tips for choosing the right Gastronorm Pan

Before ordering your Gastronorm Pans, follow these steps.

  1. Check the brand of your existing Gastronorm Pans (and or Bain Marie). Different brands may not fit together.
  2. Measure the the space that you want the gastronorm containers to sit in.
  3. Decide how many food items you would like to display or store in the gastronorm pans. Divide that number by the width of your catering unit and you have the width required of your preferred gastronorm pan.
  4. Check the diameter is in line with your catering unit’s dimensions and choose the Gastronorm size which is closest to, and would maximise, the capacity efficiency of the unit’s space. Click on the above button for the Gastronorm size chart.
  5. Consider how you will be using your Gastronorm pan (e.g. for heating, refrigerating or steaming food) as this will help determine what type of pan you should choose (e.g. Stainless Steel Pans or  Polypropylene Pans).
